Recipes to Try in Quarantine

COVID-15 is reaaaalllll. But I’m not mad about it.

I’ve been cooking nearly every meal for Akash & I for the two months, with the exception of Friday dinners that we consider ‘date night’ and we order in. I’ve found cooking to be so fun, and it’s been exciting getting to try new recipes that I’d never tried before and perfecting some of my favorite go-to’s. Here are some of my fave recipes that I’ve tried + some that are on my list! If you guys are interested in more recipes, I’ll make this a series.

PS: a ton of these are from Bon Appetit! They’re my FAV go-to for all things food.

Breakfast

Croque Madame – I’ve made my own version of Croque Madame, that consists of turkey instead of ham, and an amazing bechamel that’s easy AF. Linking a recipe for y’all here in case you want a guide to follow!

Egg-in-a-Hole: For all my WFH friends, this is a great option to make if you’re cramped for time in the morning. Easy easy.

3 Ingredient Pancakes – In the mood for pancakes but don’t want to take a trip to the store for pancake mix? Try these! Easy & yummy.

Cinnamon Date Sticky Buns – No words needed for this one. It’s incredibly tasty, I could eat these for forever.

Lunch/Dinner

Pan-Seared Salmon + Side of Veggies – About 3 months ago, I discovered this GEM of a video where Gordon Ramsay shows you how to pan sear a salmon properly. I’ve used this method every time, and it’s foolproof. The fish comes out so flaky & incredibly flavorful, with the crispiest skin. Akash isn’t a big fish lover, and he LOVES this dish. Depending on whatever I have in the fridge, I’ll usually chop up the veggies I have on hand and toss with olive oil on a sheet pan + pop those babies in the oven. Easy peezy.

Broccoli Bolognese with Orecchiette – Leftover broccoli? Here’s the recipe for you. SO easy but so tasty. I’d also imagine this is a great way to sneak in veggies if you have kids.

Homemade Pizza – a super fun way to have a date night or fun dinner at home! Most of the ingredients you probably already have in your pantry anyway.

Gigi Hadid’s Vodka Pasta – I’ve made this THREE TIMES this week! It’s insanely delicious. Reminds me of the pasta at Jon & Vinny’s, a cult fave here in LA. Gigi Hadid shared this recipe on her stories about a week ago, and obviously I had to try it out. Definitely didn’t regret! Highly recommend giving it a shot – plus, you probably already have all the ingredients in your pantry.

Desserts

Best Chocolate Chip Cookies EVER – No lie, these are the best cookies you’ll probably ever have. I’ve made these 4x since I found the recipe, and they’ve been devoured every time. The only edit I have for this recipe is to sprinkle a few sea salt flakes on top. Mwah! So delish. Thank me later.

Apple Pie – for the base & the filling, I used this BA recipe. My personal fave way to make this pie though, is to top with a crumb topping instead of a ‘traditional’ apple pie (pie crust with slits on top.) Rachel Parcell has a really easy crumble topping recipe that’s bomb!
